We have a dish called caldereta which has goat’s meat as the main ingredient. Drinkers love goat caldereta but I don’t know why. An added dish to the goat is the kilawin or kinilaw – the goat’s skin is soaked in vinegar with chili and eaten raw. But they say that the skin was already singed on fire so it is somehow cooked. When there is an occasion, wealthy people buy a whole goat for that purpose of calderata and kilawin.
