Fresh lumpia or spring roll is made mostly of vegetables particularly cabbage, green beans (Baguio beans), sweet potato and coconut core known as ubod. It is sauted with shrimp and pork before wrapping in the roll wrapper. The fresh lumpia is a side dish for meat dishes like roasted pork or even steak.

Fresh ubod is the most popular but in our home we prefer the pure vegetables - cabbage, Baguio string beans, carrots, sweet potao and bean sprouts. Aside from the pork bits, we also include shrimps and sometimes even chicken to make for more flavor. The dip is made from corn starch with soy sauce and a little sugar. Add to the dip crushed garlic and that’s the best fresh lumpia for me.
